Step 2: Add butter pieces and mix until dough forms pea-size pellets. Step 3: Add chilled maple syrup and 2 tablespoons of water, and mix on low speed until the dough can be formed into a ball. Do not overmix the dough or it will become tough. Step 4: Separate dough into two balls and flatten into disks. Step 5: Wrap each disk with plastic wrap and refrigerate for at least 2 hours. Step 6: After two hours; in a small bowl, combine 1/4 cup granulated sugar and 4 teaspoons ground cinnamon. Step 7: Lightly flour a work space and a rolling pin.
